To Freeze or Not to Freeze, that is the question? Coffee acts like a sponge soaking up the moisture around it. The only time you should freeze is if you purchase more coffee then you can consume in a 2 week period. If this is how you need to shop then put a two weeks supply of fresh coffee into a ceramic canister. Make sure it has an air tight seal. With the remaining coffee, make each portion enough for a 2 weeks supply. Fill each portion to the top of a freeze proof container to eliminate as much air as possible. When you need more coffee, pull another two-week portion out of the freezer and transfer the coffee into the original short-term ceramic canister. And remember once you pull the coffee from the freezer, do not put it back . Refrigerators are a no-no for coffee. The temperature is generally around 37 degrees, the water that is inside doesn't freeze. There is a cold mist that will linger on the coffee. Also, there are scents and flavor molecules floating around in the refrigerator that coffee can absorb. Under no circumstance should you use the refrigerator for storing coffee. When storing, remember that coffee is very sensitive to: Oxygen, Water, Excessive Heat, Direct Sunlight and other flavors floating around in the air.
